Ingredients:
1 cup cashews 130 grams cacao butter, melted 1/2 cup pure maple syrup 2 teaspoons liquid vanilla 1 pinch fine Himalayan sea salt 2 drops Young Living Geranium essential oil (or you could use Peppermint or Orange essential oil) NB only use flavourings or essential oils approved by FSANZ 3/4 cup shredded coconut 1/2 cup buckwheat kernels 1/2 cup pistachios, roughly chopped 1/3 cup goji berries 1/8 cup dried cranberries, roughly chopped 1/8 cup sour cherries, roughly chopped 1/8 cup currants, roughly chopped
Method Gently melt the cacao butter in a double boiler over the stove, until all of the solids have dissolved. While the cacao butter is melting, process the raw cashews in a high-speed blender until they are finely ground. Add in the maple syrup, vanilla and pinch of salt , blend again until the mixture is very smooth. Once the cacao butter is completely melted, add to the cashew mixture and blend again until velvety. Add in the geranium oil or alternative flavouring Add in the shredded coconut and pulse once or twice. Mix in buckwheat, roughly chopped pistachios, cherries and dried fruit by hand. Press mixture into silicon moulds or lined loaf pan. Place the White Christmas in the freezer to set for 6 hours, or until very firm. Pop out of silicon moulds or use a sharp knife dipped in hot water, to cut and serve.
