Crunchy Muesli Bars
I made some healthy treats full of nourishing seeds and nuts !😋
Dry Ingredients
I/2 cup flaked almonds
1/4 cup buckinis
1/2 cup of dried fruit of choice or choc chips. (Or 1/4 cup desiccated coconut and 1/4 cup chopped macadamias)
1/4 cup sunflower seeds
1/2 cup quinoa flakes or rolled oats
4 tbsp chia seeds
1/4 tsp salt
Wet Ingredients
2 tbsp melted coconut oil
3 tbsp peanut butter or other nut butter
4tbsp maple syrup
Optional 4 drops Ginger eo. This is especially yummy if you omit the dried fruit and choc chips and just include nuts and seeds!
Preheat the oven to 175C
Add all dry ingredients to a medium bowl and combine
Add the wet ingredients to the dry ingredients and mix well
Pour into a lined baking pan (20x20cm) or into separate moulds ( I used a Tupperware silicon mould for the long bars and a silicon cupcake mould for the round “cookies”)
Bake for 22-25 minutes
Allow to cool and then if necessary, cut into bars
