What's for dinner?

Isn't this the most annoying thought for the day?


To help you out here are 3 effortless dinner ideas:



Meatball Tray Bake



Buy some ready made meatballs -(Coles sells grass fed beef meatballs)

Throw them into a baking tray with

  • 1 sweet potato - cubed

  • 1 red onion/s – large, cut into wedges

  • 1 red capsicum/s – diced

  • 1 fennel – thinly sliced

  • 4 tbsp olive oil

  • Sea salt and freshly ground black pepper – to taste

  • Pop into the oven (180C) and bake util the meatballs and veggies are cooked through

Remove and toss through some rocket or baby spinach leaves

Sprinkle with crumbled feta and olives

Serve with a big juicy salad!




Roast meat and a roast veggie salad

Roast a leg of lamb, rolled beef or a chicken with roast veggie salad

At the same time, roast some veggies - eg sweet potato, capsicum, carrots, mushrooms etc

Once these are nicely roasted toss them through some rocket and spinach leaves.

Sprinkle with pepitas if desired

Make an easy tahini dressing and pour this over the roast veggie salad

Blitz together:

*1/3 cup tahini

*1 medium lemon, juiced

*1-2 Tbsp maple syrup (or sub agave – or honey if not vegan)

*1 pinch sea salt (optional)

*1 clove garlic (minced/optional)

*Water





Chicken and veggie soup

Buy a cooked chook

Make up some broth using @gevity bone broth

Add some chopped greens and herbs

Shred the chicken into the soup

Add rice or noodles if desired

Simples!
